We’re holding a one-day cookery course with The Shotgun Chef on our family’s farm in Epping this bank holiday Monday, 6 April, 2015.
Learn the basics of farmhouse cookery including:
Preparing and cooking game
Cooking spring lamb
Filleting and cooking trout
You’ll be welcomed to our family farm and will enjoy lunch and dinner along with a wine tasting with the evening meal.
What you’ll learn
Students will learn skills such as plucking, skinning and gutting skills, slow cooking, roasting, curing, recipe selection, simple dinners and desserts and how to create inspiring meals with The Shotgun Chef’s expert knowledge of living off the land.
On the menu are tasty treats such as wild goose curry, homemade pancetta, spring lamb, rainbow trout, pigeon and venison.
Lessons run from 10am – 6:30pm with a sit down dinner served at 6:30pm. Partners may join us for dinner and wine tasting for an extra £45.
Course tutor William Alldis, has worked as a head chef in the West Country, is a fifth-generation farmer and published food writer. He says: “Farmhouse cookery is one of the most wholesome and flavoursome types of cooking, with simple principles that everyone can use in their meals at home. Many of these recipes have been passed down through my family for generations. This course will help you master the basics of delicious farmhouse cooking, you’ll learn what to do with seasonal ingredients and we’ll have you rustling up delicious dishes in no time at all.”
